Quelques règles doivent être respectées afin d’obtenir une conservation efficace du fromage pour permettre aux arômes de se développer pleinement. En outre, les réfrigérateurs peuvent également avoir la fâcheuse tendance d’assécher l’humidité naturelle du produit… pour mieux diffuser son odeur.
En règle générale, les fromages sont meilleurs quand ils sont consommés rapidement et ne gagnent jamais à être conservés trop longtemps. Néanmoins, voici quelques règles de base qui permettront de garder vos délicieux produits :
Gardez toujours votre fromage dans son emballage d’origine, même après ouverture, en prenant soin de le fermer soigneusement. Ne le remplacez pas par du cellophane, du film plastique, de l’aluminium ou autre. L’emballage doit pouvoir bien adhérer pour éviter que le fromage ne s'assèche et ne se dégrade.
La DLC (Date Limite de Consommation) porte sur un produit non ouvert.
Comment conserver un fromage à la coupe
Ne mélangez pas les fromages et gardez-les séparés dans du papier ciré ou du film alimentaire pour qu’ils ne se dessèchent pas et qu’ils puissent continuer à respirer. Vous pouvez aussi les conserver dans le papier du fromager.
Nous ne vous recommandons pas le papier aluminium, mais si vous n’avez pas d’autre choix, pensez à bien le perforer avant. On vous laisse par contre l’utiliser pour le fromage bien odorant (ou dans une boîte en plastique).
La durée de conservation d’un fromage au frigo dépend de son type :
On déconseille fortement la congélation du fromage, même si c’est faisable. Les fromages à pâte dure et à pâte molle perdent du goût, la texture peut se dégrader ou s’effriter... Les fromages à faible taux d’humidité supportent mieux la congélation que les autres, s'ils ont été mis sous vide, emballés dans du papier aluminium puis glissés dans un sac de conservation.
Ne congelez que du fromage râpé (ou des pâtes fermes comme le cheddar ou le fromage suisse), si vraiment vous ne pouvez pas faire autrement.
